«Tuna tataki»

250ml soya sauce
2 cm of grated ginger
Zest of 1 lemon
50ml mirin
50ml soya vinegar
Juice of 2 lemons
200 grs tuna
Brown the tuna in hot olive oil, then conserve in the marinade
Tuna Sashimi:
Arrange the tuna in fillets. Cut the fillets into smaller slices to make it easier to roll. Roll the tuna slices and serve.

To Serve:
50 grs of tuna per person Sea salt to taste
