«Loin of lamb in a crust of pistachio, quinoa and vegetables»

600 g lamb
200 g peeled and finely
chopped pistachios
100 g quinoa
200 ml water
½ onion
½ lime
1 clove of garlic
1 carrot
1 courgette
1 turnip
2 eggs
Place the garlic and the chopped onion in a pan with a little oil, add the quinoa, and stir a little before adding the cubed vegetables. Cover with water and let it cook slowly, stirring from time to time. At the end, season with salt, pepper and the juice of half a lime. Set aside.

Cut the lamb into small strips, remove any gristle, season with salt and pepper. Coat the strips in flour, then beaten egg and then in peeled and chopped pistachios. Place the lamb in a pre-heated oven for 15 to 20 minutes at 200°.

Using a rectangular dish, arrange the quinoa in the upper left corner and the lamb to the right.
